A nutritional composition comprising fat, protein and carbohydrate, including a combination of curcumin, demethoxycurcumin and bisdemethoxycurcumin and a method of preparing the composition are disclosed, the combination comprising about 0.7 to about 14 HLB Solubilized in a polar oil having a value, the weight ratio of bisdemethoxycurcumin to curcumin is about 1: 1 to about 1: 7, and the weight ratio of bisdemethoxycurcumin to demethoxycurcumin is about 1: 1 to about 1: 2.5. This composition provides a selected ratio of curcuminoids with improved biological activity, bioavailability and reduced color effects. |
