abstract [PROBLEMS] To provide a processed chestnut (hereinafter referred to as “extremely soft chestnut”) generally referred to as extremely soft chestnut or extremely soft chestnut sweet roast, and a production method thereof. A method for producing an extremely soft chestnut having the following steps (1) and (2): (1) A seasoning processed chestnut formed by heat gelatinization of starch is used as a raw chestnut, and after depressurizing it once, it is subjected to wet heat treatment while restoring pressure or pressurizing, then restoring pressure and cooling, (2) A process of hermetically packaging and sterilizing the processed chestnut obtained above.
