abstract An object of the present invention is to provide a method for accurately estimating the degree of hotness of an Allium plant. Another object of the present invention is to provide a simple and quick method for estimating the degree of hotness of an Allium plant suitable for multi-sample treatment. The present invention relates to a method for estimating the hotness of an edible part of an onion plant based on the amount of a lacrimal component producing enzyme (LFS) in an onion plant such as an onion.
