abstract | A yeast extract and a dietary supplement that can be suitably used for ingestion and supplementation of nucleic acids, particularly pyrimidine nucleotides, since they contain a high amount of pyrimidine nucleotides and hardly contain purine nucleotides. And a method for producing a yeast extract. A yeast extract solution containing 5′-nucleotide is adsorbed on activated carbon and then eluted with water, and pyrimidine-based nucleotides (5′-uridylic acid, 5′-cytidylic acid and their salts) are added in an amount of 20 wt. A yeast extract containing 5% or more and containing purine nucleotides (5′-guanylic acid, 5′-inosinic acid, 5′-adenylic acid and salts thereof) of less than 5% is obtained. [Selection figure] None |
