abstract | [Problem] To provide a brewed liquor from a non-malt raw material with a reduced purine compound and a method for producing the same, and more particularly, to produce a brewed liquor from a non-malt raw material such as sake or wine. Provided is a method for selectively, efficiently and effectively removing a compound, and a brewed liquor having a reduced purine compound produced by the method. In a process for producing brewed liquor from non-malt raw materials such as sake and wine, the brewed liquor is treated with an adsorbent for selectively adsorbing a purine compound in the brewed liquor, in particular, activated carbon. It has been found that purine compounds can be selectively adsorbed and removed, and that efficient and effective production of brewed sake with reduced purine compounds is possible. As the activated carbon used in the present invention, particularly those having an average pore diameter of 1.5 to 2.3 nm are effectively used. |
