Acyltransferases suitable for use in the production of omega fatty acid rich microbial oils in oleaginous yeast (eg, Yarrowia lipolytica) are provided. Specifically, the gene encoding diacylglycerol acyltransferase (DGAT1) is Y. Isolated from lipolytica and Mortierella alpina. These genes encode enzymes that are involved in the final stages of oil biosynthesis in yeast. Each is expected to play an important role in changing the amount of polyunsaturated fatty acids produced in oily yeast oil. |
