The present invention relates to methods and compositions involving whey protein isolate. The methods of the present invention include a purification process that prepares a substantially non-denaturing whey protein over a pH range that includes an isoelectric point. Thus, such whey proteins have a low turbidity in solution over a wide range of pH values. Whey protein isolate can be incorporated into compositions and solutions having nutritional, pharmaceutical, and other uses. |
