abstract |
An economical and efficient method for glycosylation of a phenolic compound such as curcumin is provided. A method for producing a glucose glycoside of a phenolic compound, wherein the following reactions (1) and (2) are carried out in a container containing sucrose synthase and glucose transferase: (1) a step of producing nucleoside diphosphate-glucose by reacting nucleoside diphosphate with sucrose in the presence of sucrose synthase; and (2) nucleoside diphosphate-glucose in the presence of glycosyltransferase. A step of reacting a phenolic compound to produce a glucose glycoside of nucleoside diphosphate and a phenolic compound. [Selection figure] None |
