[PROBLEMS] To obtain softer natto. SOLUTION: Bacillus subtilis KFP843 strain (FERM AP-20123 strain), and natto produced using this strain. KFP843 was isolated from Toushi collected in Yunnan, China. As a result of identification, the morphological property of KFP843 is a bacilli having a diameter of 0.8 μm and a bacterium having one endospore in the central part of the bacterial body, and thus identified as a bacterium belonging to the genus Bacillus. did.
