PROBLEM TO BE SOLVED: To provide a liquid food preservative capable of preventing the generation of fungi and mold without deteriorating the flavor and quality of food and remarkably improving the preservability of food. SOLUTION: A liquid food preservative was prepared by mixing and dissolving 0.15% lauric acid and 0.45% decaglycerin monolaurate (monoester content of about 80%) in 57.0% ethanol. |
