abstract |
An object of the present invention is to provide a glyceride containing docosapentaenoic acid as a constituent fatty acid in a high ratio. A glyceride containing docosapentaenoic acid (DPA) as a constituent fatty acid in an amount of 10% by weight or more as a constituent fatty acid of the present invention is a raw material oil or fat containing a glyceride containing DPA as a constituent fatty acid in an amount of less than 5% by weight. Hydrolyzing using an enzyme that releases DPA preferentially over other constituent fatty acids; separating and recovering a fatty acid fraction containing DPA or its ester from the obtained hydrolysis product; and A glyceride from the recovered fatty acid fraction and glycerin.
