abstract PROBLEM TO BE SOLVED: To provide a process for producing a nootkatone which can obtain a nootkatone having a high purity and an excellent aroma in a very high yield and with high selectivity. SOLUTION: This method for producing a nootkatone comprises treating valencene with a unicellular algae belonging to the genus Chlorella or a processed product thereof and converting it to nootkatone to produce nootkatone. In addition, a method for producing nootkatone, which comprises producing nootkatone by treating hydroxyvalencene with a unicellular algae belonging to the genus Chlorella or a processed product thereof and converting it to nootkatone.
