(57) [Summary] Mutant yeast which produces a large amount of ethyl caproate and isoamyl acetate among aroma components by mutation has been bred and isolated. The novel mutant yeast is a drug that mutagenizes various yeasts and inhibits fatty acid synthases such as cerulenin, a drug capable of producing high caproic acid, and 5,5,5-trifluoro-DL-leucine and the like. And a drug-containing medium capable of increasing isoamyl alcohol and isoamyl acetate, which is obtained from a grown strain. [Effect] Alcoholic beverages and breads containing a large amount of both aroma components of ethyl caproate and isoamyl acetate can be produced. |
