abstract PROBLEM TO BE SOLVED: To provide a method for producing a composition containing soy isoflavone aglycone mainly containing soybean genistein by a simple operation with a high recovery rate. The soybean protein raw material, the soybean protein raw material extract or the soybean protein raw material by-product is enzymatically decomposed with an enzyme agent having protease activity and β-glucosidase activity, soybean-derived protein is made water-soluble, and isoflavone is obtained. The glycoside is converted to isoflavone aglycone, which is washed with water to remove water-soluble components, and then the water-insoluble portion is recovered. Particularly, when an organic solvent is added to the enzyme reaction solution in an amount of 1 to 50%, the recovery rate is improved.
