abstract (57) [Summary] [Problem] A fat and oil thickener containing a food emulsifier as an active ingredient, and a thickened fat and oil containing the same, which are highly safe and can thicken fats and oils with a small amount of addition. A composition is provided. The thickening agent for fats and oils comprises a polyglycerin fatty acid ester whose main constituent fatty acid is behenic acid and the degree of esterification is 50% or more as an active ingredient, and the polyglycerin fatty acid ester is 0.1 to 0.1%. A thickened fat or oil composition containing 10% by weight.
