abstract | PROBLEM TO BE SOLVED: To provide a novel fructosyl amino acid oxidase (FAO) excellent in fructosyl valine (FV) oxidation ability D). SOLUTION: The cells of the genus Trichosporon , preferably Trichosporon mucoides KDK4001 shown in FIG. A single FAOD can be obtained by culturing (FERM P-17134), extracting the protein from the obtained cells by disrupting the cells, and performing purification. This Trichosporon Mucoides KDK4001 ( Tricho sporonmucoides KDK4001) (FERM P-1713) 4) Derived FAOD is, for example, FAO derived from other cells. Compared with D, the specific activity to FV is high, and the FV has excellent oxidation resolution. |
