abstract (57) [Summary] PROBLEM TO BE SOLVED: To date, gum arabic has been used for confectionery, beverages, gum jelly, emulsified flavors, etc. by utilizing its emulsifying power, film properties, and stability of size liquid, but still has its function. In particular, the emulsifying power was not sufficient. SOLUTION: A gum arabic having a specific drying loss or less is provided. It can be obtained by heat treatment under specific heating conditions.
