abstract | Modified tapioca starch, dispersible in cold water and having gelling properties. Ordinary tapioca starch is subjected to a conversion bringing its fluidity to water between about 10 and 63, then reacted with at least 0.005% by weight of a crosslinking agent, until the Brabender differential viscosity measured between 80 and 95 degrees C approximately -20 to + 30% to 7% dry matter with the 700 cm-g cartridge or approximately -35 to -4% to 10% dry matter with the 350 cm cartridge -g, a Brabender viscosity at 80 degrees C of at least about 100 BU at 7% dry matter with the 700 cm-g cartridge or at least about 400 BU at 10% dry matter with the 350 cartridge cm-g, and this starch is dried on a tumble dryer. |
