The subject of the invention is a process for the transformation of starchy materials comprising a chemical fluidification step and a stabilization step, simultaneous or not, these two steps being carried out in the dry phase and by implementation respectively: an acid, mineral or organic, making it possible to thin the starchy material to a value of fluidity in water (WF) at least equal to 10, preferably at least equal to 45, and of an aldehyde compound, in particular of a condensate between an aldehyde and a nitrogen compound, capable of stabilizing said starchy material. n n n The acid may in particular consist of an acidnstrong, preferably implemented at a ratenless than 0.5%, for example of the order of 0.05 ton0.4% (dry / dry). The aldehyde compound is alsonadvantageously used at a rate of less than 1%, bynexample of the order of 0.01 to 0.95% (dry / dry).n n n The process allows to obtain in shortnreaction times, for example between 2nminutes and 6 hours, highly starchy materialsnfluidized (WF> 45) and highly stabilized (indexnS <3.5).
