abstract | Elimination of diarrheal toxins (DSP) in fishery products by processing with modified supercritical carbon dioxide. 1) Elimination by continuous extraction by passing a mixture in a supercritical state of C0{sub,2} and ethanol (5 to 20% ethanol by volume) through a cell in which the contaminated products that have previously been partially dehydrated are placed by lyophilization. 2) Destruction of toxins and inhibition of toxic activity in a high pressure atmosphere (150-300 bars) of CO{sub,2} mixed with acetic acid (5-10% by volume). The processing of the products, partially dehydrated by lyophilization, is carried out in a hermetic chamber that is filled with the supercritical mixture. After a variable minimum processing time (from half an hour to several hours), the chamber is returned to a normal atmosphere by depressurization. |
