The invention relates to process for detoxifying shellfishncontaminated with paralytic toxin, whereby decontamination isnachieved by an industrial process that involves a chemicalntreatment of shellfish, the chemical treatment consisting inncooking the shellfish in an alkaline pH solution. Thisntreatment could be combined with one or several othernprocesses aimed to the reduction of the product finalntoxicity, for example partial shellfish detoxification byndepuration, removal of the most toxic parts, and commercialncooking/canning. This procedure succeeds in reducing totalntoxicity level of shellfish to values lower than 80 ug ofneq. STX/ 100 g shellfish, independently of the toxin profilenor initial toxicity present in the shellfish. |
