A method for drying allulose crystals is proposed, comprising or consisting of the following steps: (a) providing undried allulose crystals, (b) Temperature treatment of the crystals according to step (a) at a temperature in the range from about 25 to about 70 ° C in a drying system, wherein the temperature treatment (b1) at atmospheric pressure and a residence time in the range of about 5 minutes to about 5 hours, or (b2) takes place under reduced pressure and constant temperature and a residence time of about 30 minutes to 5 hours, and (c) conditioning of the intermediate product obtained in step (b1) or (b2), wherein (c1) the conditioning takes place over a period of about 30 minutes to 7 hours at a temperature in the range of about 40 to about 70 °C, or (c2) the conditioning is carried out with air at a relative humidity of about 30 to about 60% and at a temperature of about 25 to about 40°C for a period of about 15 to 90 hours. |
