The present invention aims to provide a method for producing a sugar liquid, which method comprises the Steps (1) to (3) below: nStep (1): a step of adding a filamentous fungus-derived cellulase to a pretreated product of cellulose to obtain a hydrolysate; nStep (2): a step of adding waste molasses to said hydrolysate to obtain a mixed sugar liquid; and nStep (3): a step of subjecting said mixed sugar liquid to solid-liquid separation and filtering the obtained solution component through an ultrafiltration membrane, to recover the filamentous fungus-derived cellulase as a non-permeate and to obtain a sugar liquid as a permeate. n By the present invention, the enzyme recovery of filamentous fungus-derived cellulase from a cellulose hydrolysate is improved, so that the amount of cellulase used in the process for producing a sugar liquid can be reduced. Further, in the present invention, by adding waste molasses to the cellulose hydrolysate to prepare a mixed sugar liquid, sugar components can be recovered not only from cellulose but also from the waste molasses. |
