This portion is wrappednin a closed package having a wall of a permeable filmnselective way to regulate the oxygen content and carbon dioxide of theninternal gaseous volume of the packaging by gas exchange between this volumeninternal and the surrounding ambient atmosphere. The exchange surface andnthe gas permeability of the film are chosen so as to essentiallynallow a continuation of the metabolic activity of the flower on the surfacencrust, while avoiding the development of a flower on the sliced surface.nThe invention also applies to pressed cheese, in particularncontrolled designation of origin, with a natural crust subject tondegradation when cheese is kept with its crust in the atmospherenpoor in oxygen.
