The invention provides an aroma powder based onnan alcohol-containing liquid, in particular a winenpowder, which, when used in foods, in particular soups,nsauces and desserts, gives rise to the same flavournimpression as the addition of the underlying alcohol-containingnliquid. The aroma powder displays little tastenof its own, is readily free-flowing and meterable,nparticularly in the dry form, and is non-hygroscopic ornonly slightly hygroscopic. The aroma powder containsnaroma-active constituents of an alcohol-containing liquidnand, as a carrier for the aroma-active constituents, anhigh-amylose starch product, in particular pea starch andnpea amylose. |
