The present invention is concerned with a spread comprising less than 30 wt.% of a continuous fat phase containing less than 35 % saturated fatty acid residues and at least 70 wt.% of an aqueous phase containing a gelling amount of edible gelling agent, which spread contains 0.5 to 7.0 % by weight of the fat phase of an emulsifier selected from the group consisting of monoglycerides, diglycerides and mixture thereof, said emulsifier having a iodine value of at least 40. n Due to the unique formulation of the present spread,conditions of overworking in the preparation of said spread are effectively be averted. |
