abstract A method and device for the assay of alkaline phosphatase in ndairy products. A sample of the dairy product is added to a self-­nindicating fluorometric substrate comprising a single orthophosphoric nester on a phenolic ring. After hydrolysis of the phosphate radical nby the alkaline phosphatase in the sample, the substrate and the nsample added thereto are exposed to electromagnetic radiation at a nfirst wavelength. The increase in fluorescence at a second wavelength nproduced by the hydrolysis of the phosphate radical by the alkaline nphosphatase is determined. This increase is linearly related to the nactivity of alkaline phosphatase present in the sample of the dairy nproduct.
