The invention pertains to the use as hard-fat substitute suitable for confectionery products and manufacture, of indigestible polyol fatty acid polyester having a composition of fatty acid residues derived from substantially fully hardened vegetable oils, and having an N-line characterised by an Nāā within the range of 50 to 100 and an Nāā within the range of 0 to 5. The invention further pertains to confectionery, and in particular chocolate products comprising such indigestible polyol fatty acid polyesters. |
