A process for producing thermostable - amylases in a state highly resistant to elevated temperatures even in the presence of low calcium concentration and under the conditions normally employed in process for the enzymatic hydrolysis of starch by culturing thermophilic micro-organisms at elevated temperatures, comprising the aerobic submerged culturing of a selected strain in a suitable culture medium and recovering the thus produced enzyme from the culture medium. The strains of micro organism suitable for the process are micro organisms having the characteristic of Lactobacillus acidophilus ATCC 31283, Bacillus sp. NCIB 11887 or NCIB 11886, Bacillus circulans AT CC 21822, Bacillus licheniformis ATCC 27811 or NCIB 11874 or any of the mutants thereof. |
