abstract Flavored long-life drinks based on acidified whey. Process for the preparation of such drinks comprising a step of simultaneous acidification and decationization of the whey by cation exchange with a cation exchange resin in acid form or by electrodialysis on cationic membranes for the time necessary to lower the pH of said whey to a value equal to or less than 3.8 and to at least partially decationize it, followed by a step of heat treatment of the acidified and decationized product at a temperature of 100 to 160 ° C. to sterilize the latter. These flavored drinks are characterized by a pH less than or equal to 3.8 and a reduced content of mineral matter. They are stable in storage and do not present an unpleasant acid and saline taste.
