abstract | The present invention relates to a process for producing an olive paste or an olive powder which comprises treating olive pomace with at least one enzyme capable of reducing the viscosity of the pomace and passing the obtained product through a sieve having a suitable mesh size to remove at least 80% by weight of the olive stone particles from the product. This process enables the preparation of an olive paste or powder which is substantially free of olive stone particles and has high levels of polyphenols associated with high antioxidant potential. Corresponding olive pastes or powders can be used as food or as an ingredient for food. Due to the high antimicrobial activity of the olive paste or the olive powder, an inhibition or even a complete suppression of mold growth on corresponding foods or food products is possible. |
