The invention discloses nanometer antibacterial glucose-based composite particles and a processing method and application thereof, belonging to the technical field of modern food processing. The invention uses natural glucose-based nanoparticles as raw materials, and utilizes particle surface positioning modification and physical field charge transfer technology to prepare nano-antibacterial composite particles. The obtained nano-antibacterial glucosyl composite particles have a particle size of 50-1000 nm, a surface zeta potential of 0--10 mV, and a broad-spectrum bacteriostatic rate of >98%; it can effectively prolong the shelf life of food and prevent product spoilage; it can be used in food, textile , daily chemical, medicine and many other fields, the application prospect is very broad. |
