The invention discloses an ORAC (organic antioxidant activity) evaluation method based on fluorescein ethyl ester, which has greater applicability without adjusting the pH value. The method is suitable for water-soluble and fat-soluble antioxidants, a sample to be detected and fluorescein ethyl ester are uniformly mixed, and AAPH is used as a free radical initiator to evaluate the antioxidant activity. The method has the advantages of wide application range and in-situ evaluation.
