abstract | The invention relates to a method and plant for the production of dried fermented dairy products for self-use as a probiotic functional food additive or for inclusion in the composition of probiotic nutritional additives with specific bioactivity. The method and the installation ensure maximum reproduction of Lactobacillus delbrueckii subsp.bulgaricus cells - not less than 10 billion g / g. The plant is sterilized easily. Avoid undesirable contamination, products, even high in protein, have no bitter taste. They are standard, with high probiotic activity and acceptable organoleptic qualities. The method involves enzymatic processing of milk for digestion of milk sugar, enzymatic hydrolytic treatment of milk for decomposition of milk casein, mixing of the products obtained with flavor and pectin, decoction and drying. After the enzymatic hydrolysis of the milk fermentation is carried out with bacteria with high proteolytic activity. After mixing the low lactose milk product with the liquid hydrolyzate and flavor enhancer and after sterilization, an automatic fermentation of Lactobacillus delbrueckii subsp. Bulgaricus with proven probiotic properties is carried out. After lyophilization drying, the dry product is granulated together with a dried concentrated culture of Streptococcus thermophilus.
