abstract | An oil oxidative stability measurement instrument (20) comprises a moisturized air source (22), a sample reaction vessel (8), a volatile compound trap (28), and an automatic data acquisition and control system (16, 18). The instrument measures the oxidative stability of a 200 g oil/fat sample by monitoring the progression of conductivity of deionized water in the trap for oil degradation volatiles. One instrument measurement for oil stability is the linear slope of conductivity versus time for each oil tested. Conductivity measurements over time are converted to equivalent concentrations (mM) of acetic acid, and the time required to exceed 0.2 mM acetic acid or the induction time is a second instrument measurement for oil stability. The instrument also mesures the protective effect of dimethyl siloxane against thermal oxidation of oils. |
