abstract A process for the large scale purification of the hexose sugar galactose. The process comprises hydrolysing a galactose-containing disaccharide or polysaccharide into its constituent monomers; non-galactose sugar monomers are then converted into non-sugars by the addition of enzymes selective for these monomers. The galactose may then be removed using known purification techniques.
