abstract The invention concerns a process for preparing N-acylaminocarboxylic acids and N-acylaminosulphonic acids and their alkali metal salts from the alkali metal salts of aminocarboxylic acids or aminosulphonic acids and carboxylic acid glycerides. The process comprises the following steps: (a) a suspension of the solid anhydrous alkali metal salts of the aminocarboxylic acids or aminosulphonic acids in the carboxylic acid glycerides is prepared; (b) this suspension is left to react by the addition of strong bases to the alkali metal salts of the N-acylaminocarboxylic acids or N-acylaminosulphonic acids; and (c) optionally, the free N-acylaminocarboxylic acids or N-acylaminosulphonic acids are prepared therefrom in the conventional manner by adding acids.
