A thermostable xylanase is provided as an additive for an animal feed. The xylanase is one which is able to tolerate heating for one minute in a waterbath set at 95 °C without substantial loss of activity. Such a xylanase may be obtained from Microtetraspora flexuosa or Thermomonospora fusca. A feed additive including such a thermostable xylanase is also provided in combination with a physiologically acceptable carrier which may be a cereal or cereal-based. A cereal-based feed is also provided which includes at least 20 % by wheight of a cereal and 0.00001-10 g of thermostable xylanase protein per kg of feed. The cereal may be any one of wheat, barley, maize, sorghum, rye, oats, triticale and rice. The cereal-based feed may be provided to any livestock, and in particular to poultry and pigs. |
