Emulsifier compositions comprise: a) at least one membrane lipid, b) at least one natural amphiphile which is not a primary emulsifier, and, optionally, c) a hydrophilic medium. These efficient emulsifying systems are characterised by the absence of synthetic emulsifiers. Stable oil-in-water emulsions or dispersions formed using these emulsifier compositions, and from which synthetic surfactants or emulsifiers are substantially absent, are described. Creams based on such emulsions or dispersions are also described and which may include lipid vesicles or liposomes, optionally with one or more biologically active compounds entrapped therein. Methods for producing the emulsions, dispersions and creams are also provided. |
