abstract | For subsequent treatment of clarified juice, the juice is placed in contact with an additive, e.g. PVPP, and filtered in a cross-flow filtration device (11), whereby the heated juice is separated from the additive in the form of a permeate. The additive can be regenerated inside or outside the installation by adding water and alkaline solution. After regeneration, the alkaline solution is removed by diafiltration on the permeate side of the cross-flow filtration device (11). The cross-flow filtration permits the yield, the universal applicability of additives, and the quality of the treatment of the juice to be substantially improved. |
