Cheese press for a plurality of lines of cheese molds constituted by a plurality of cassette-shaped pressing units (30), each of these units being designed to receive a line of molds or batteries of molds, each of which units being provided in its upper part with pressing means (68) for pressing the molds. Each of these units can be made in the form of a lightweight construction, for example of stainless steel sheet and is preferably made in the form of a thermally tube, which can be sealed at its end so as to withstand the vacuum. In particular, the production of Cheddar cheese is considerably accelerated when the pressing is carried out under vacuum. Cassette-shaped units may be arranged in a conveyor system for processing by a loading and unloading station, or may be arranged more or less stationary to cooperate with means of transporting the molds to and from the units in. form of cassettes. |
