abstract | The present invention provides a method for producing a gel-like composition which contains a large amount of an organic acid. This method for producing a gel-like composition comprises the following steps (1) to (4): (1) a step for obtaining an aqueous solution that contains a pectin; (2) a step for obtaining an aqueous solution having a pH of 2.8 to 6 by mixing the aqueous pectin solution obtained in step (1) with gluconic acid and a mineral; (3) a step for obtaining a concentrated solution having a gluconic acid concentration of 20% by mass or more by concentrating the aqueous solution obtained in step (2); and (4) a step for cooling the concentrated solution obtained in step (3). |
