[Problem] To provide a novel sophorolipid derivative that has high water-solubility and is surface active. [Solution] A plurality of sophorolipid derivatives having novel structures were isolated and purified from a cultured product of a sophorolipid-producing microorganism (S. bombicola, etc.). Formula (1) (In the formula, R1 to R3 are each independently hydrogen, a fatty acid ester having 2 to 22 carbon atoms, or the depicted SL group, with at least one of R1 to R3 being the SL group.
