abstract The present invention relates to a composition of spoonable fermented fromage frais with a high protein content, such as quark or skyr, intended for individuals requiring increased protein intakes, such as sportspeople and elderly individuals. To this effect, the composition according to the invention is characterized in that it comprises: - at least 8% by weight of proteins relative to the total weight of the composition, - the proteins consisting of a mixture of casein and milk serum proteins according to a weight ratio between 50/50 and 75/25, - the milk serum proteins comprising at least 20% of denatured milk serum proteins in the form of microparticles, by weight relative to the total weight of serum proteins, - and in that the pH is less than or equal to 4.6.
