abstract | The present invention pertains to a powder food that contains an insoluble dietary fiber-containing food material including localized insoluble dietary fiber regions, and that satisfies (1) and (2) and satisfies at least (3-1) or (3-2). (1) The contained amount of insoluble dietary fibers is at least 5 mass% on a dry mass basis. (2) The number-average particle size (MN2) of particles in the powder food is less than 30 μm when an ultrasonic treatment is performed by a laser diffraction particle size distribution measurement device using ethanol as a measurement solvent. (3-1) A numerical value N calculated by a calculation formula below is at least 0.40. N = numerical value α/numerical value β. Numerical value α: the number of particles having a roughness of at most 0.6 and a roundness of at most 0.2 as measured by method A. Numerical value β: the number of particles having a roughness of at least 0.6 and a roundness of at most 0.2 as measured by method A. Method A: 10,000 fine particles and/or fine particle complexes in a powder food before an ultrasonic treatment are analyzed in an isopropyl alcohol solvent using a particle shape image analysis device. (3-2) The regression coefficient a of a regression line y = ax + b determined by the method of least squares is greater than 0.35, where variable x and variable y represent the roundness and roughness, respectively, of a planar particle image as measured by method A. |
