abstract The invention relates to anti-UV molecules of natural origin, and to the process for the synthesis thereof and also the process for the synthesis of analogues thereof. More particularly, it relates to a two-step process for the synthesis of sinapoyl malate, of sinapine and of analogues and derivatives thereof; this process is faster and more ecological than the prior art processes. The molecules obtained by means of this process are water-soluble.
