abstract The present invention relates to a method for producing defatted walnut powder with an increased mineral content, defatted walnut powder with an increased mineral content prepared by the method, and a processed food containing the defatted walnut powder, the method comprising the steps of: (1) primarily drying raw walnuts with far-infrared radiation by means of a far-infrared dryer; (2) extracting oil from the walnuts that have been primarily dried with far-infrared radiation in step (1); (3) secondarily drying the oil-extracted walnuts of step (2) by means of the far-infrared dryer; and (4) pulverizing the secondarily dried walnuts of step (3).
