The present invention concerns a method for isolating a lactic bacteria strain capable of overproducing exopolysaccharides, which method comprises the steps of i) culturing a bacterial population of lactic bacteria in a semi-liquid culture medium and ii) identifying and isolating clones exhibiting a reduced mobility in said culture medium; a lactic bacteria strain capable of being obtained by this method; a composition comprising such a strain and the use of such a strain as rheological agent. |
