abstract One embodiment of the present invention provides an agar preparation method comprising: preparing an agar-containing solution by performing hot water extraction on raw agar; solidifying same by cooling, and then pulverizing same into a predetermined size; and washing same with purified water, thereby obtaining a solidified product of a purified agar-containing solution. The agar preparation method according to the present invention is simple, and thus is advantageous for commercialization, and uses no bleaching agents and the like, and thus is safe to be consumed as food. In addition, agar prepared by the method according to the present invention has improved sensitivity to β-agarase, and thus a neoagaro-oligosaccharide mixture in which the amount of neoagarotetraose and neoagarohexaose is relatively high can be prepared.
