abstract The present invention relates to a method for preparing fermented powder for removing odor and unpleasant smell of fat from a livestock by-product, and a method for using same, the fermented powder being a means for forming a lactobacillus coating film on livestock by-product (the entrails, skin and the like of livestock) by means of a fermented product which is made into fine particles by mixing perilla seed dreg, rice germ and rice bran with lactic acid bacteria and fermenting same, and thus blocking the penetration of harmful bacteria from outside and, internally, enabling enzymolysis of the feces and odor-inducing substances remaining in the folds of the entrails, pores of the skin, and blood by means of the yeast activity of the lactic acid bacteria. The present invention eliminates odor and unpleasant smell of fat, provides smooth and savory taste and extends shelf life. The present invention provides a method for preparing fermented powder for removing odor and unpleasant smell of fat from a livestock by-product, and a method for using same, the preparation method comprising: a first step of sterilizing perilla seed dreg, rice germ and rice bran, and mixing same; a second step of preparing a fermentation composition by mixing lactic acid bacteria with the mixture of previous step and making same into a paste; a third step of preparing a fermented mixture by fermenting the fermentation composition of previous step in a fermentor; a fourth step of drying the fermented mixture of previous step; and a fifth step of preparing a fermented product which is made by grinding the dried fermented mixture of previous step into fine particles.
